Darcy

OUR CHEF DARCY

Darcy graduated from Caribou College in Kamloops from the Culinary Arts Program in 1985. His first professional cooking position was at the Fairmont Hot Springs Lodge. His next stop was Vancouver during Expo '86. He worked at O’Doules Hotel on Robson.

In 1988 he ventured to Toronto and secured a position at Centro, a fixture on the Toronto dining circuit even today.

The traveling started in 1989, he was off to England at the Youville Court Hotel in Somerset, and then Le Petite Canard in Maiden Newton, Dorset (a two star restaurant in Britain’s Michelin guide).

Next stop was Switzerland working in Morges on Lac Geneve at a restaurant called Aquaries. From Switzerland it was down to Australia where he worked at the Paramata Huntley Hotel outside Sidney, then Sanctuary Cove in Queensland and finally at the Hamilton Island Hotel. 1991 saw Darcy return to Canada.

A winter season at Big White, which was followed by a summer season at Galliano Lodge, then Lake O’Hare Lodge near Lake Louise for two summers and Jack’s Grill here in Edmonton in the winters, Jack’s Grill turned into a full time position and Darcy started working there year round until he decided to venture out on his own here at in Oct. 2000,
